Breakfast food we like

Protein Pancake with Strawberries
Oil spray
1/2 cup quick-cooking oats
4 egg whites
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup sliced strawberries (or half of a banana, sliced)

Generously coat a skillet with oil spray and heat over medium heat.
In a medium bowl whisk together the oats, egg whites, sugar, vanilla, and cinnamon.
Pour mixture into skillet and cook until golden brown, about 2 to 3 minutes on each side. (For a moister pancake, cover the skillet while the pancake is cooking.) Top with strawberries or banana slices.

Makes 1 serving.
Challenging? This recipe gets you 2 serving of whole grains and at least 1 serving of fruit.

Turkey Sausage Scramble

1 turkey sausage , casing removed
1/4 cup (canned or fresh) sliced, mushrooms
1/2 cup (frozen or fresh) sliced peppers and onion medley
1 large egg, beaten
1/4 cup shredded cheese

In a small skillet coated with nonstick cooking spray, cook sausage over medium heat, breaking into small pieces. When almost done, add mushrooms and vegetables to the skillet; cook 2 to 3 minutes, until heated through. Pour egg into skillet and stir gently to cook through. Remove from heat, sprinkle with cheese and cover for 2 minutes to melt cheese.

Greek Yogurt Parfait
Greek yogurt is high in protein, low in fat, creamy and delicious. While there are hundred of ways we can use it for cooking; our favorite is simply layering it with our favorite whole grain cereal, fresh or frozen fruit, grabbing a spoon and indulging.
